Im making Beef Wellington~ Any suggestions for potatoes to go with it?

I would go with mashed, garlic mashed or some other mashed :)

How do you make wellington and what cut of beef do you use? I've always wanted to try it.

That sounds good. I've never heard of wellington with proscutto, it's always had pate' EEEEW!

What cut of meat do you use?

DH used to make those for me once in a while. Yum!

I say scalloped or au gratin potatoes.

I would cube some potatoes and bake them w/ a mint sauce.

DOUBLE VOMIT! Wretch and HURL!!

I ate lamb once and it was the yuckiest meat ever! I might as well have licked a wet dog, or a moldy wet sheep! YUCK!

Now that I don't eat meat, I do crave a gyro once in a while.

I've never heard anyone say they didn't like lamb.

I bet it wasn't cooked well, or something. LOL. That is the only explanation.

Roasted New Potatoes

Quarter small new/red potatoes
Coat with Extra Virgin Olive Oil; Herbs de Provence (or you can use Italian Seasoning); chopped or minced garlic; salt and pepper
Cook at 400• for @ 1 hour

Garlic ROsemary Potatoes

oven at 400 degrees

put salt pepper, 3 garlic cloves (minced), rosemary, and olive oil in a ziploc bag.

Half the little red potatoes, wash and dry them. Drop into the ziploc and mix it up. Bake for 35-45 minutes.

I've fixed it with scalloped, baked of mashed potatoes. Depends upon my mood and the occasion.

I love all potatoes. I always make potatoes based on how I'm feeling not how it pairs with a meal since in the end people love it anyways.

Todays suggestion: Homemade cheesy scalloped potatos. Skin, slice par boil 8-10 mins, then I make a cheese mixture like I would for baked mac and cheese: flour, dried mustard, pepper, butter, milk, cheese. Poor Over potatos and bake. Delicious!

Mint Sauce
1/2t sugar
1/2t salt
2T lemon juice
1/4C olive oil
2T fresh mint (chopped)

I double it if I am using it for lamb. I don't peel the potatoes so the peels really soak up the flavor. I also usually throw a few whole garlic cloves in to bake w/ it.
